Zucchini Frittata

  • 3 large eggs
  • 1/4 teaspoon salt
  • 1 teaspoon canola oil
  • 1/2 cup onion, chopped
  • 1 cup zucchini, coarsely shredded
  • 1/2 cup Swiss cheese, shredded

Cooking time 20mins


Step 1

Preheat oven to 350°F.

Whisk together eggs and salt.

In an 8 inch oven proof skillet coated with cooking spray heat oil over medium heat sauté onions and zucchini until onion is crisp tender - pour in egg mixture cooking till almost set 5 to 6 minutes.

Sprinkle with Swiss cheese and bake uncovered until cheese is melted 4 to five minutes.
