Potato & Cabbage Soup w/ Sausage

This recipe is a hearty soup that's great on a chilly day with a beer and sourdough bread. This is great with a group of people. This soup has no cream so it's lower in calories.
Ingredients
- 4 tbs evoo
- 1 large vidalia onion that is cut into small chunks
- 6 garlic cloves, minced
- 1 large head of cabbage or l bag of shredded cabbage
- 6 yukon potatoes, peeled and cut into small chunks
- 3 large carrots, peeled and cut into small chunks
- 1 1/2 lbs of smoked sausage cut into small slices
- 6 cups chicken broth
- 1 bottle of beer
- 1 tsp caraway seeds, slightly crushed
- 4 tbs fresh parsley chopped
- sea salt and coarse ground pepper to taste

Step 1
Heat the evoo in large pot over medium-high heat and add onio. Stir for five minutes until onion is translucent. Add garlic and cabbage and stir until the cabbage is wilted, a few minutes. Add potatoes, carrots and sausages and stir. Season with caraway seeds, parsley, salt and pepper.
Pour in broth and beer. Cut back on broth if too much broth in pot. Should be enough broth to cover the contents. Cover and bring to boil and lower the heat to simmer until vegetables are soft, about 40 - 45 minutes.
