Pork Tenderloin with Sweet and Sour Cabbage

Ingredients
- 1 - 1 lb. pork tenderloin
- 1/2 tea. salt
- 2 Tbsp. vegetable oil
- 2 Tbsp. grainy mustard
- 2 slices bacon, chopped
- 1 onion, thinly sliced
- 1/2 large head red cabbage, cored and thinly sliced
- 1/4 cup cider vinegar
- 1/4 cup sugar

Step 1
Preheat oven to 450 degrees. Sprinkle pork with salt.
Warm oil in a skillet over medium-high heat. Brown pork, turning occasionally. Transfer to a plate. Spread mustard over pork.
Add bacon to skillet; saute 1 minute. Add onion, saute 3 minutes. Add cabbage, vinegar and sugar; saute until wilted, about 5 minutes.
Place pork on cabbage; roast until a meat thermometer registers 150 degrees, about 15 minutes.
Let stand 5 minute3s; slice and serve.
