Shrimp Poached with Beer, Old Bay and Lemon

Ingredients
- 1 Bottle of Beer
- 2 tsp kosher salt
- 2 lemons , halved
- 3 bay leaves
- 1 handful of fresh thyme sprigs
- 1 head of garlic, split horizontally
- 1 tbsp. old bay seasoning
- 2 pounds jumbo shrimp with shells on
- Lemon wedges
- Cocktail Sauce

Preparation
Step 1
1. Fill a large pot witn 2 quarts of water.
2. Crack open the beer and pour it in
3.Add salt, and squeeze in lemon juice; toss halves in to pot
4.Add herbs, garlic and old bay. Bring to a boil over medium high heat and simmer for 5 minutes to infuse water with the aromatics
6.Reduce heat to medium low , add shrimp, simmer uncovered for 2-3 minutes or until shrimp is bright pink.
7.Drain, then transfer to bowl.
8. Chill thoroughly then peel shrimp
9. Serve with lemon wedges and cocktail sauce
NOTE; Recipe can be doubled
