Ingredients
- Salt & Freshly Ground Black Pepper
- 3/4 lb. Dry Linguine
- 2 Tbsp. Olive Oil
- 1 Sm. Red Onion, halved & cut into 1/2-in. thick slices
- 2 Garlic Cloves, minced
- 2 Zucchini, halved crosswise, cut lengthwise into 1/4-in. thick slices & cut into 1/4-in. sticks
- 2 Plum Tomatoes, quartered lengthwise & cut into 1/4-in. wide strips
- 3/4 C. Shredded Parmesan Cheese

Step 1
In a lg. pot of boiling, salted water, cook pasta till al dente ( approx. 6-8 min ) Meanwhile, in a lg. skillet, heat 1 Tbsp. oil over med. Add onion & garlic; cook, stirring frequently till translucent, 3-5 min. Add zucchini & 1/2 C. water; season with salt & frshly ground black pepper. Cover & cook, stirring occasionally till zucchini is tender, about 10 min. Drain pasta, reserving 1 C. pasta water; return to pot. Add zucchini mixture, remaining Tbsp. oil, tomatoes, 1/2 C.Parmesan & reserved pasta water. Season with salt & freshly ground black pepper; toss to combine. Serve immediately, sprinkled with remaining parmesan.
