Ingredients

  • 2 Tbsp cocoa powder
  • 1 Tbsp ancho chile powder
  • 1 tsp cumin
  • 1/2 tsp chipotle pepper
  • kosher salt
  • 2 tsp oil
  • 2 pork tenderloins
  • 1 2/3 c cherry preserves
  • 1/3 c vinegar
  • 1 tsp oregano

Preparation

Step 1

Mix dry ingredients together
Roll meat in mixture to coat well
Sear all sides in medium heat about 4 min
Cook at 375 for 20 min
Whisk preserves with vinegar and boil 30 sec
Spoon sauce over tenderloin and serve
