Cuban Chicken Thighs and potatoes (papas asadas)

Ingredients

  • Serves 3
  • 3 TBS fresh orange juice
  • 3 TBS fresh lime juice
  • 1 TBS extra virgin olive oil
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp ground ginger
  • 1 tsp black pepper
  • 4 chicken thighs (with skin and bone in)
  • 2-3 yukon gold potatoes cut into 2" pieces
  • extra virgin olive oil
  • south american spice (ie cuban, brazillian or make your own)

Preparation

Step 1

Mix first 9 ingredients together and pour over chicken in covered bowl or sealed plastic bag. Marinade for 7-8 hours or overnight.

Cut potatoes into cubes. Add olive oil and cuban/brazillian spices. Toss together in bowl

Preheat oven to 400.

Pour chicken and marinade onto foil covered baking sheet .

Pour potatoes next to them.

Bake for l hour.
