Roasted Carrots with Bacon

I had some leftover raw carrots and wanted to use them as a side dish. This a very simple recipe adapted from a FineCooking recipe. You could also add in a few parsnips for a different flavor.

Ingredients
- 1-1/2 lb. carrots, cut into 1-inch pieces
- 2 slices bacon, diced
- 1 tablespoon maple syrup
- 1 tablespoon chopped fresh parsley (optional)
- Kosher salt and freshly ground black pepper

Preparation
Step 1
Preheat oven to 400°F.
In a bowl, toss the carrots with maple syrup, bacon, salt and pepper.
Place in a single layer on a parchment paper lined baking sheet.
Roast until carrots are tender, about 30 minutes. Remove from oven and toss with parsley, if desired.
Calories - 120 per 1/4 serving, approximately 1 cup.
