Ingredients

  • 6

    large green onions

  • 2

    green peppers, chopped

  • 1 or 2

    cans of tomatoes, diced or whole

  • 3

    carrots, diced

  • 1

    container (10-ounce) mushrooms, sliced

  • 1

    bunch of celery, diced

  • Half a head of cabbage, chopped

  • 1

    package of Lipton spice only soup mix

  • 1 or 2

    cubes of bouillon, optional

  • 1

    (48-ounce) can Low Sodium V8 juice, optional

  • Season to taste with pepper, parsley, curry, garlic powder, etc.

Directions

Slice green onions, put in a pan on medium heat. Lightly spray with cooking spray as you start to sauté. Do this until the onions are almost clear in color (about 4-6 minutes). Add green peppers, celery, carrots, mushrooms and tomatoes. Season with Lipton spice only soup mix and add 12 cups of water (or 8 cups and the 48 oz of Low Sodium V8 juice). Cover and put heat on low. Let soup simmer for about 2 hours or until vegetables are tender If you would like a spicy soup, add a small amount of curry or cayenne pepper now.
