  • 2 1/4 c chicken stock
  • 1 c pearl couscous
  • 2 Tbsp butter
  • 2 cloves garlic, thinly sliced
  • 2 tsp fresh lemon juice
  • 1/4 tsp ground nutmeg
  • 2 1/2 oz baby arugula
  • 1/2 c grated Parmesan
  • 1/2 c thinly sliced radicchio

In large skillet, boil first 6 ingredients over high, covered, until couscous is al dente, 9 min. Stir in remaining ingredients.
