Ingredients
- 2 1/4 c chicken stock
- 1 c pearl couscous
- 2 Tbsp butter
- 2 cloves garlic, thinly sliced
- 2 tsp fresh lemon juice
- 1/4 tsp ground nutmeg
- 2 1/2 oz baby arugula
- 1/2 c grated Parmesan
- 1/2 c thinly sliced radicchio

Preparation
Step 1
In large skillet, boil first 6 ingredients over high, covered, until couscous is al dente, 9 min. Stir in remaining ingredients.
