Grapefruit Chiffon Pie

Ingredients

  • 1 1/2 cups sugar
  • 1/4 tsp. salt
  • 2 1/2 grapefruits, sectioned
  • 1 cup grapefruit juice
  • 1 1/4 tbsp. gelatin powder
  • 1/4 cup cold water
  • 3 egg whites, beaten stiff
  • 3 egg yolks
  • 1 tsp. grated rind
  • 2 tbsp. lemon juice

Preparation

Step 1

Mix the sugar, egg yolks, salt, juice and rind in the top of a double boiler and cook over low heat until thick. Stir in the gelatin powder and cool. Add grapefruit sections. When mixture begins to thicken, fold in the stiffly-beaten egg whites.

Pour into a baked pie shell and cool. Serve with whipped cream.
