Garlic Herb Spaghetti Squash with Pine Nuts

Ingredients

  • 2 lbs. spaghetti squash
  • 2 T butter
  • 1/8 t red pepper flakes
  • 4 cloves minced garlic
  • 1/4 C chicken stock
  • 1/4 C grated PARMESAN Cheese
  • 2 T minced herbs, parsley, basil, oregano &/or thyme
  • 1/4 C toasted pine nuts
  • Salt & pepper to taste

Preparation

Step 1

Preheat oven to 375. Cut squash lengthwise & remove seeds

Place squash flesh side down in large baking dish & cover with 1/2" water. Bake @ 45 min. or until tender.

Using a fork, rake flesh from squash. Transfer to bowl & set aside.

Melt butter in large saute pan over med heat. Add red pepper flakes & garlic; stir @ 30-45 sec. Add reserved squash & chicken stock & sauce until squash is heated thru.

Remove pan from heat & stir in Parmesan cheese, herbs & pine nuts. Season with salt & pepper. Transfer to serving dish & serve.
