Ingredients

  • 1 cup fresh shredded coconut (if fresh isn't available, use 1 cup dried coconut + 2 T coconut oil)
  • 1 T maple syrup
  • 2 slices crispy bacon - cooked
  • 10 dates - pits removed
  • 2 t coconut flour
  • 1/4 t sea salt
  • 1/3 cup dried shredded coconut for rolling in

Preparation

Step 1

- If dates aren't soft, remove the pits and soak them in hot water for 5 minutes & then drain
- Place all ingredients (except dried coconut for rolling) in your food processor
- Process until date are chopped and all ingredients come together to form a loose ball
- Use a small scoop to divide the mixture into 12 balls. Especially with fresh coconut, you'll need to use your hands to squish it together and roll into balls
- Roll the balls in dried coconut to coat the outside
- Place in the freezer for 15-30 minutes to harden
- Store in the fridge for 4-5 days (if you can make them last that long :)- Enjoy!
