Pork Chops with Blueberry Sauce

Ingredients
- 1 teaspoon each black pepper and garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne
- 4 lean boneless pork loin chops
- 1 tablespoon vegetable oil
- 2 cups frozen blueberries
- 1/4 cup sugar
- 2 tablespoons vinegar
- 2 tablespoons chopped parsley
- 1 teaspoon each chopped fresh thyme and sage

Preparation
Step 1
Combine pepper, garlic powder, salt and cayenne, mix well. Sprinkle pork chops with mixture and press into surface. Brown chops in oven safe non-stick pan. Bake at 400 for 12 minutes or until moist but cooked.
Remove pork chops. combine remaining ingredients in skillet. Cook over medium-high heat until mixture begins to thicken. Serve over chops.
