Ingredients

  • 3 lbs little red potatoes, cut into bite size
  • 1 lb bacon, cooked and crumbled
  • 1 1/2 - 2 c blue cheese or gorgonzola
  • 3/4 - 1 c mayo
  • 1/2 c green onions, chped
  • salt and pepper

Preparation

Step 1

Cook potatoes in salted water until tender, drain and rinse. Combine all ingredients and salt and pepper to taste. If you are making it early, I add the bacon right before serving so it doesn't get too soggy.
