Orzo Salad with Corn, Tomatoes, and Basil

Ingredients
- Dressing:
- 1 c uncooked orzo
- 2 c fresh yellow kernels
- 2 c shopped tomato
- 1/2 c sliced red onion
- 1/4 c finely chopped fresh basil
- 2 T lemon juice
- 1 T olive oil
- 1 tsp red wine vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 garlic cloves, crushed

Preparation
Step 1
Dressing: combine ingredients in a jar; cover tightly, and shake vigorously.
Salad: Cook pasta according to package directions, omitting salad and fat. Drain, and place in a large bowl. Spoon half of dressing over pasta, toss to coat. Cool to room temperature. Add the remaining dressing, corn, tomatoes, onion, and basil to pasta; toss to coat. Let stand 30 minutes.
