Shredded kale salad with dill feta and walnuts

Step 1

remove stems from one bunch of kale and discard
finely slice the leaves and put in large bowl
pour one quarter cup extra virgin olive oil over the kale
massage the kale for about one minute-set aside 10 min to soften
toss the kale with 1 t lemon juice, 1/2 c roughly chopped fresh dill
and 3 oz crumbled feta cheese (about 2/3 cup)
season with salt and pepper and sprinkle with 1/2 cup chopped toasted walnuts
refrigerate left overs for several days
