Banana Zucchini Bread

Ingredients

  • 4 eggs
  • 2 c sugar
  • 1 c vegetable oil
  • 2 med ripe bananas, mashed (about 1 c)
  • 3 c all purpose flour
  • 1 1/2 t baking powder
  • 1 1/2 t baking soda
  • 1 1/2 t ground cinnamon
  • 1 t salt
  • 1 1/2 c shredded unpeeled zucchini
  • 1 c chopped pecans

Preparation

Step 1

In bowl beat eggs. Blend in sugar & oil. Add bananas & mix well. In another bowl combine flour, baking powder, baking soda, cinnamon & salt; stir into egg mixture. Stir in zucchini & pecans just until combined.

Pour into 2 greased 9x5 in loaf pans. Bake at 350 for 50 min until toothpick comes out clean. Cool for 10 min. Remove from pans to wire racks to cool completely.
