Ingredients

  • 2 tablespoons dijon mustard
  • 2 tablespoons orange juice
  • 1/2 teaspoon soy sauce, low sodium
  • 1 1/2 pounds boneless skinless chicken thighs, about 8
  • 1 tablespoon orange zest, grated
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 3 ounces dry bread crumbs

Preparation

Step 1

1. Preheat oven to 350. Spray large baking sheet with nonstick cooking spray; set aside.

2. In medium bowl, combine mustard, orange juice and soy sauce. Brush chicken on both sides with mustard mixture; set aside.

3. On sheet of wax paper, combine bread crumbs, orange zest, onion powder and pepper. Dredge chicken, firmly pressing on crumb mixture on both sides.

4. On prepared baking sheet, arrange chicken; bake 15 minutes. Turn chicken; bake 15 -20 minutes longer, until cooked through.
