CORNISH HEN CITRUS HERB BRINE

Ingredients
- 2 Tyson Cornish Hens
- 1/2 cup Soy Sauce
- 1/2 gallon of cold water
- 1/2 cup kosher salt
- 1/2 cup brown sugar
- 1 orange, juiced
- 1 lemon, juiced
- 3 sprigs fresh rosemary
- 1-2 tbsp. olive oil
- kosher salt and black pepper to taste

Preparation
Step 1
Combine Soy sauce with water, salt,and brown sugar in a sauce pot over medium heat and stir will until everything is dissolved. Remove from heat and stir in orange and lemon juices with rosemary. Place the frozen hens in the brine cover and refrigerate overnight.
Preheat oven to 375 deg.
Remove hens from the brine, cut each hen down the backbone, and spread flat in a baking dish. Rub skin with olive oil and sprinkle with salt and pepper. Place into the oven for about 45-55 minutes or until internal temperature reaches 180 deg.
