Ingredients

  • Syrup:
  • 4 TBS homemade strawberry syrup, recipe follows
  • 1 cup gin liqueur (Pimms No 1)
  • 1/2 liter lemon lime soda
  • 8 scoops strawberry ice cream
  • 4 strawberries for garnish
  • 1 lb. strawberries hulled
  • 1/2 cup water
  • 1/2 cup sugar

Step 1

Syrup:
In a saucepan, combine al ingredients and bring to a boil over high heat, then reduce to a simmer over medium heat until strawberries break down and syrup thickens, about 20 minutes. Strain mixture, return to saucepan, and reduce for 10 minutes more. Chill until ready to serve.

In each glass, pour 1 TBS of syrup. Pour in 2 TBS gin, stir. Add 2 scoops ice cream and top with soda. Garnish with strawberry
