Ingredients

  • 3/4 C Pumpkin(canned)
  • 1 Extra Lg Egg
  • 2 Tbsp. Vanilla Extract
  • 2 Sticks of Butter
  • 1 C Sugar
  • 1/2 C Brown Sugar
  • 3 1/4 C Flour(All Purpose)
  • 1 1/2 Tsp. Baking Powder
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Ground Cinnamon
  • Rolling Mix
  • 1/2 C Sugar
  • 1/2 Tsp. Ground Ginger
  • 1/2 Tsp. All Spice
  • 1 Tsp. Ground Cinnamon

Step 1

In a large bowl beat butter until it is light and fluffy. Add the two sugars and pumpkin and beat thoroughly. Mix in the egg and the vanilla. In a separate bowl mix flour, baking powder, salt and cinnamon. Slowly add this to the liquid mixture a little at a time until it is completely mixed. Cover the dough and place in the refrigerator for 1 hour. While the dough is chilling; mix all ingredients for rolling the dough together.

Once the dough is chilled preheat the oven to 350 degrees. Use a cookie scoop or a tablespoon to pick up the dough. Drop the dough into the rolling mix to coat it. Roll into a ball and place on the cookie sheet. Gently flatten the dough and place it in the oven. Bake for 10 minutes. Cool on a baking rack.

I use the bottom of a glass to flatten the dough.
