Pumpkin and Delicata Squash Pork Stew

  • 3 lbs of pork kabob or shoulder
  • 2 delicata squash
  • 2 cans of pumpkin
  • 1 big can of diced tomatos
  • 2 chipotle or poblano peppers
  • 2 red peppers
  • 3 onions
  • 4 garlic cloves
  • 1 can of black beans and pinto beans
  • chili power
  • cumin
  • 2 cups of chicken stock
  • chipotle hot sauce



Step 1

In dutch oven brown pork and set aside. Saute onions, garlic, squash, peppers for a few mins and add stock and tomoatoes and pork. Add spices. Put in oven on 250 degrees for at least 3 hours or until pork is shreddable. Shred pork and add beans and chipotle hot sauce to taste. Simmer for 10 mins and serve.
