Cheddar Baked Potato Skins

Ingredients
- 4 large russet potatoes
- 2 tsp. olive oil
- 1/2 tsp. smoked paprika
- salt and freshly ground pepper, to taste
- 1/2 cup finely grated cheddar

Step 1
Preheat oven to 400F
Using a paring knife, peel the potatoes in approximately 1 inch thick strips, reserving 1/8 inch of flesh with the skins. On a baking sheet, toss the potatoes skins with the oil, smoked paprika and salt and pepper. Place them skin side down and bake 15 minutes. Sprinkle the skins with the cheese and bake an additional 10 minutes, until the edges are crispy.
I used the whole potato and just sliced them thinly.
