Shrimp and Vegetables in Garlic Wine Sauce

Ingredients

  • 2-3 lbs shrimp
  • as many chopped veggies of whatever type you like depending on season and taste (onions, peppers, broccoli, green beans, asparagus, summer squash, zucchini, tomatos, celery...)
  • 1 lb pasta
  • 4 garlic cloves, chopped
  • 1/4 cup olive oil
  • 5 Tbs unsalted butter
  • 1/2 tsp crushed red pepper
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground pepper
  • 1/2 cup white wine
  • 1/2 cup chopped flat parsley
  • 1/2 cup grated parmagiano-reggiano cheese

Preparation

Step 1

1. Heat olive oil over medium heat.
2. Add garlic and crushed red pepper. Saute until golden, about 1-2 minutes.
3. Add salt, pepper, white wine, butter.
4. Stir 2 minutes, remove from heat.
5. Saute all vegetables in oil, too.
6. Saute shrimp, as well. Or grill shrimp and add on top.
7. Toss pasta with sauce, parsley, and cheese.
8. Add cooked veggies & shrimp.
