Caraway Cheese Potatoes

Ingredients

  • 3 large new potatoes, boiled, cooled and cubed
  • 5 T butter
  • 1/3 cup green onions, thinly sliced
  • 3 T flour
  • 1 1/2 cups chicken broth
  • 1 tsp caraway seed
  • 1/2 tsp cumin powder
  • Salt and white pepper to taste
  • 1 cup shredded Swiss cheese
  • 1/2 cup fresh bread crumbs, coarse
  • 1/8 tsp paprika
  • 3 T Sweet and Hot mustard

Preparation

Step 1

Place cubed potatoes in a 2 qt casserole. In saucepan, melt butter, set aside 2 T. Add onions to remaining 3 T and saute until transparent. Add flour and cook until bubbly.

Add broth, caraway, cumin and mustard. Cook until thickened. Pour over potatoes.

Spread cheese on top and sprinkle bread crumbs, paprika and remainder of butter on top. Bake uncovered at 400 degrees for 20 minutes.
