Cinnamon-Apricot Glazed Salmon

Ingredients
- 2 tbsp. low-sodium soy sauce
- 1 tbsp. minced ginger
- 2 cinnamon sticks
- 12 oz. apricot nectar
- 8 dried apricots, sliced
- 4 salmon fillets (6 oz. each)

Step 1
Combine soy sauce, ginger, cinnamon sticks, apricot nectar, and sliced apricots in a saucepan and bring to a boil. Reduce heat and simmer until reduced to approximately 3/4-cup thick glaze (about 30 minutes). Preheat oven to 350*F and spray a baking dish with cooking spray. Lay fillets in baking dish and brush with apricot glaze. Bake salmon for approximately 20 minutes (until flaky). Place salmon on plate and pour on glaze with some of the apricots.
