Potato Soup Crock Pot

Ingredients
- 1 30 oz. bag of frozen diced potatoes
- 4-6 cups chicken stock or broth
- 1 10 oz. can of cream of chicken soup
- 1 8 oz. pkg. cream cheese
- 1/2 c. bacon bits or cooked chopped bacon
- 1 c. shredded cheddar cheese
- salt and pepper

Step 1
Put the potatoes in the crockpot, add chicken broth, cream of chicken soup and bacon bits. Add salt and pepper to taste. Cook on low for 6-8 hours until potatoes are tender. An hour before serving cut cream cheese into small cubes and put in crockpot and stir several times during the hour. 15 minutes before serving add in the cheddar cheese and stir. Once the cream cheese is all mixed in and cheese is melted, it is ready to serve. Garnish with more cheddar cheese and bacon bits.
