Muffins, Lime-Coconut Banana with Macadamias

Ingredients
- 1/2 cup macadamia nuts
- 2 1/4 cups whole wheat pastry flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened coconut, shredded
- 2 large overripe bananas
- 1 cup brown sugar
- 4 limes
- 1 large egg
- 1/2 cup vegetable oil
- 1 cup powdered sugar
- 1/2 tsp vanilla

Preheat oven to 350. Line a 12 cup muffin pan with paper liners and spray top of pan with Pam to prevent muffin tops from sticking.
Chop nuts and set aside.
In a large bowl, mix flour, baking soda, salt and coconut. In a food processor, puree the bananas. Add brown sugar and puree again. Grate zest from the limes add to the dry mixture. Juice the limes and measure 1/2 cup juice for the batter, reserving 2 TB for the glaze. Add 1/2 cup juice, egg, and oil to banana mixture and puree to mix.
Stir the wet mixture into the dry mixture, then fold in the nuts. Portion into 12 muffin cups. Bake for 25 minutes or until tester comes out clean. Cool on a rack.
When muffins are completely cool, measure powdered sugar, 2 TB juice, and vanilla into a shallow bowl. Stir thoroughly to make a thick paste. If too dry add more juice. Dip each muffin into the glaze.
