Salmon with Pineapple and Brown Rice

Ingredients
- 1 cup canned crushed pineapple in water or juice
- 4 teaspoons apple cider vinegar
- 4 teaspoons brown sugar
- 2 teaspoons Dijon-style mustard
- 1 teaspoon low sodium soy sauce
- 3 cloves garlic, pressed
- Water/oil mixture
- 4 salmon fillets
- 3 cups cooked brown rice

Preparation
Step 1
In a mixing bowl, combine pineapple, vinegar, brown sugar, mustard, soy sauce and garlic; set aside. Spray a large skillet with water/oil mixture over medium-high heat; add salmon fillets and cook for about 3 minutes per side. Pour half of the sauce over the fillets and simmer for about 2 minutes. Turn salmon and spoon remaining sauce on top; again simmer for about 2 minutes. Serve with hot rice and enjoy!
