Turkey Breast Fajitas with Strawberry Jalapeño Salsa

Ingredients

  • 1 T olive oil
  • 1 T ancho chile powder
  • 1/2 t cumin
  • 1/4 t cinnamon
  • 1/4 t cayenne
  • 3 1/2 , skinless, boneless turkey breast, butterflied to 1" thickness
  • Kosher salt.
  • 1 med red onion, thinly sliced on mandoline
  • 2 jalapeños, thinly sliced
  • 5 T sherry vinegar
  • 3 T honey
  • 1 qt thinly sliced strawberries
  • 12 corn tortillas
  • 1 red bell pepper, thinly sliced
  • 2 med. chopped tomatoes
  • 1 diced avocado
  • 1 large bunch cilantro

Preparation

Step 1

LIght grill. In small bowl, combine olive oil, chile powder, cumin, cinnamon & cayenne pepper. Rub spice paste all over turkey breast. Season with salt & pepper
In med bowl, toss sliced onion & jalapeños with sherry vinegar. Add pinch of salt & let stand, tossing a few times, for 15 min.
Meanwhile, grill turkey over med=hi fire until lightly charred & cooked thru. @8 min per side
Stir honey into salsa until dissolved. Then fold in strawberries & season with salt.
Heat corn tortillas on grill until warm, @ 5 seconds per side. Transfer to cloth lined basket & cover to keep warm. Thinly slice turkey & transfer to platter; serve with tortillas, salsa, red bell pepper, tomatoes, avocado & cilantro
