Garlic-Rosemary Roasted Chicken & Potatoes

Ingredients
- 5 tablespoons butter, softened
- 4 cloves garlic, minced
- 1 whole garlic bulb
- 2 tablespoons rosemary, finely chopped
- 3 sprigs rosemary
- 5 pounds roasting chicken
- 2 cans potatoes
- salt and pepper

Preparation
Step 1
Combine butter, minced garlic and chopped rosemary. Set aside.
Rinse chicken and pat dry. Sprinkle cavity of bird liberally with salt and pepper. Stuff with garlic head and rosemary sprigs. Rub chicken on all sides with half the butter mixture. Season with plenty of salt and pepper. Place chicken in roasting pan and bake at 400F for 1 hour.
Toss potatoes with remaining butter mixture and arrange around chicken. Continue to roast chicken another 30 minutes.
