Leftover Corn Fritters

- 1 pouch (6.5 oz) cornbread mix
- 1 1/2 cups leftover corn
- 1 large egg
- 1/2 cup milk
1. Combine cornbread mix, leftover corn, egg and milk. Let stand 5 min.
2. Heat vegetable oil in a pan and drop heaping TBSPs of batter into hot oil; cook 1-1 1/2 min on each side. Flatten with spatula after turning.
3. Serve warm or at room temp.
