Ingredients
- SALSA:
- 1 orange, segmented
- 1/4 cup orange juice
- 1 mango, diced
- 2 tsp shredded coconut
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 TBS jalapeno, minced
- 2 TBS Texas Pete fiery wing sauce (or equivalent)
- 2 TBS lime juice
- Pinch of cayenne pepper
- CHICKEN:
- 1 lb boneless chicken tenders
- 1 cup flour
- 3 eggs
- 1 cup panko breadcrumbs

Preparation
Step 1
SALSA:
1. Combine all ingredients. Allow flavors to infuse for 45 minutes. Serve with chicken.
CHICKEN:
1. Combine breadcrumbs and flour. Beat eggs in a shallow dish. Dip chicken in eggs and coat with breadcrumb mixture. In a cast iron skillet, heat 4 TBS of oil over medium-high heat. Pan-fry chicken, flipping once until golden brown, approximately 8-10 minutes.
Makes 4 servings. Each serving = 11 Weight Watchers points (does not include points for oil used in frying)
