Stir Fried Zucchini & Mushrooms


Quick and easy stir fry.

  • 1 lb zucchini
  • 8 oz mushrooms
  • 1 T cornstarch
  • 1 T cold water
  • 1/4 C veg oil
  • 1 medium onion finely sliced
  • 2 cloves garlic finely chopped
  • 1/2 t salt
  • 2 T dark soy sauce
  • 1/4 C chicken broth


Preparation time 10mins
Cooking time 20mins


Step 1

Cut zucchini lengthwise into halves, then cut into diagonal slices about ¼ in thick.
Slice mushrooms.
Mix cornstarch and water.
Heat wok, add veg oil and coat all sides.
Add onion and garlic & stir fry.
Add zucchini, mushrooms and salt.
Stir fry and then add soy sauce and chicken broth – heat to boiling.
Stir in cornstarch mixture and stir until thickened.
