Ingredients

  • DRESSING:

  • Juice of 1/2 lemon

  • 2

    tablespoons balsamic vinegar

  • 1

    teaspoon maple syrup

  • 1

    clove garlic, minced

  • 1/3

    cup extra virgin olive oil

  • SALAD:

  • 1

    cucumber, diced

  • 1

    small sweet onion, diced

  • 2

    roma (plum) tomatoes, chopped

  • 2

    (15-ounce) cans fava beans, drained

Directions

Whisk the lemon juice, balsamic vinegar, maple syrup, garlic, and olive oil together in a bowl to make the dressing. Toss the cucumber, onion, tomatoes, and fava beans together in a large bowl; pour the dressing over the vegetable mixture and toss to coat. Chill for 1 hour before serving.
