Ingredients
- 1/2 each green pepper, thinly sliced
- 1/2 each red pepper, thinly sliced
- 1/2 each yellow pepper, thinly sliced
- 1/2 medium red onion, thinly sliced
- 3 tablespoons oil
- 3 packages frozen hash brown potatoes (24oz)
- 1 cup grated cheddar cheese

Preparation
Step 1
PREHEAT oven to 350.
IN a large skillet, heat oil; add peppers and onions. Cook and stir until soft. Remove from skillet and set aside.
COOK potatoes according to directions on package. Add pepper and onion mixture; fold carefully. Transfer to a baking pan. Sprinkle cheese on top. Reheat uncovered for 30 to 40 minutes, until potatoes are thoroughly heated.
