Mindy's Pumpkin Crunch Dessert

Ingredients

• 1 box yellow cake mix
• 1 can evaporated milk (may use FF)
• 1 can (15 oz) pumpkin
• 3 eggs
• 1 1/2 C sugar (may use all splenda or half and half)
• 4 tsp cinnamon OR
• 2 tsp cinnamon, 1/2 tsp nnutmeg amd pinch allspice
• 1/2 C chopped pecans
• 1/2 - 1 C melted butter (I used 1/2)

Preparation

Step 1

- Combine pumpkin, milk, eggs, sugar, salt, spices; pour into sprayed 13 X 9 pan
- Sprinkle cake mix over top; top with pecans and melted butter
- Bake at 350 for 50 - 55 min until golden brown
- Serve warm or cool with whiped topping if desired.
