Grilled Steak with Warm Shallot Vinaigrette

  • 3/4 C shallots (2 large)
  • 1/2 C olive oil
  • 2 1/2 T sherry vinegar
  • 2 t Dijon mustard
  • 1/4 C parsley
  • Salt & pepper
  • 2 1lb. New York strip steaks

Step 1

In small saucepan, cook shallots in olive oil over lo heat, stirring frequently, til softened but not browned, @ 10 min. Transfer to blender & let cool briefly. Add vinegar & mustard & puree til smooth. Add parsley & pulse til finely chopped. Season with salt & pepper.
Meanwhile, light grill. Season steaks with salt & pepper. Grill over mod hi heat, turning once, til med rare, 10-12 min. Let steaks rest for 5 min. Transfer to plates; top with vinaigrette & serve.
