Cilantro-Lime Chicken with Avocado Salsa

~ I adjusted some of the ingredient amounts. We put the juices from the salsa over the chicken, too, which gives it extra flavor!

Ingredients
- Chicken:
- 3 TB chopped cilantro
- 3 TB fresh lime juice
- 2 TB olive oil
- 1/4 tsp salt
- 4 skinless, boneless chicken breast halves
- Cooking spray
- Salsa:
- 1 cup chopped plum tomato (about 2)
- 2 TB finely chopped onion, optional
- 2 tsp fresh lime juice
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 TB chopped cilantro
- 1 avocado, chopped

Preparation
Step 1
Chicken: Combine first 5 ingredients in a large bowl or Ziploc bag; toss, & marinate 1-2 hours. Remove chicken from marinade; discard marinade. Heat grill or grill pan over medium-high heat. Coat with cooking spray. Add chicken & cook 6 minutes on each side or until done.
Salsa: Combine tomato & next 5 ingredients in a medium bowl. Add avocado; stir gently to combine. Serve salsa & juices over chicken.
