Mediterranean Pasta With Fire-Roasted Tomatoes

Ingredients
- 2 lbs. (10-12) Plum Tomatoes, halved lengthwise
- 1/2 C. Olive Oil, divided
- 1 Tbsp. Italian Seasoning
- 2 Cloves Garlic, minced
- 1/2 tsp. Crushed Red Pepper
- 1/4 tsp. Coarse Ground Black Pepper
- 1/2 tsp. Sea Salt
- 8 oz. Pasta, such as spaghetti or fettuccine

Preparation
Step 1
Preheat oven to 400. Place tomatoes, cut sides up, on a foil-lined baking sheet. in a sm. bowl, combine 1/4 C. olive oil, garlic & spices. Spoon over tomatoes. Drizzle with 2 Tbsp. of the remaining oil. Bake for 45 min. or till tomatoes are soft & browned on top. Cook pasta till al dente (approx. 6-8 min.); drain well. Coarsely mash 1/2 of the tomatoes with remaining 1 Tbsp. olive oil. Add pasta & remaining tomatoes; toss to mix well & serve.
