Ingredients
- 2 c fresh cooked corn
- 2 c black beans
- 1/2 red bell pepper small diced
- 1/2 green bell pepper small diced
- 4 roma tomatoes small diced
- 1/2 red onion small dice
- 2 scallions sliced thinly on the bias
- 2 avocados diced
- 1/3 c fresh chopped cilantro
- 1/4 c fresh squeezed lime juice
- 1/4 c red wine vinegar
- salt and pepper to taste
- 1/2 c extra virgin olive oil

Step 1
. Make vinaigrette ahead of time and chill ; lime juice, red wine vinegar, olive oil, salt and pepper
. Combine the rest of the ingredients in a large bowl season with salt and pepper, stir in the vinaigrette, taste and adjust seasoning
