Zucchini walnut bread

Ingredients
- 2 1/2 cup all purpose flour
- 1 1/2 tsp cinnamon
- 1/2 tsp ground cloves
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 1/2 cup sugar
- 3/4 cup vegetable oil
- 3 eggs
- 2 cups unpeeled grated zucchini
- 1 cup finely chopped walnuts
- 1 tsp vanilla
- 1/4 cup confectioners sugar (optional)

Step 1
Preheat oven to 350.
Using solid vegetable shortening thoroughly grease a 9x5x3 loaf pan. On a sheet of waxed paper sift flour with 1 1/2 tsp cinnamon, cloves baking soda baking powder and salt and set aside.
Put 1 1/2 cup sugar, oil and eggs in mixer and mix Beat sugar mixture until very smooth.Using a wooden spoon stir sifted flour mixture gradually into sugar mixture and mix till smooth. Add zucchini nuts and vanilla stir gently with wooden spoon. Scrape into prepared pan, place in centre of oven and bake 1 hour and 15 minutes. Remove from oven and cool 10 minutes.
