Pumpkin Bread with Cream Cheese Frosting (optional)

Ingredients

  • 1 1/2 cups sugar
  • 1 cup canned or fresh pumpkin
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 2 eggs
  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon each ground cloves, cinnamon and nutmeg
  • 1/4 teaspoon baking powder
  • 1/2 cup chopped pecans or walnuts (optional)
  • Cream Cheese Frosting
  • 4 -once cream cheese, softened
  • 1 cups powdered sugar
  • 1/2 tablespoon pure vanilla extract
  • 1/2 tablespoon maple syrup

Preparation

Step 1

In a mixing bowl, combine first five ingredients. Combine all dry ingredients. Gradually add to pumpkin mixture. Fold in pecans. Pour into a greased 9-in x 5-in x 3-in loaf pan.
Bake at 350 for 70 - 80 minutes or until a toothpick comes out clean. Cool for 10 - 15 minutes; remove from pan to a wire rack to cool completely.

Frosting - In a mixing bowl beat cream cheese until smooth. Add powered sugar and beat until integrated and fluffy. Add vanilla and maple syrup and continue to beat until well integrated and smooth. Add more sugar or syrup as needed for desired consistency.

Frosting can be spread on bread when cool or used like a butter when cut as desired. (Some of our family loves the frosting others don't, so we usually use like a butter.)
