Spinach, Orange and Red Onion Salad

Ingredients
- 1 bag of baby spinach, washed and pat dry
- 1 Tbsp Extra Virgin Olive Oil
- 1 tsp fresh lemon juice
- 2 large navel oranges, peeled and with pith removed cut into segments
- 8-12 very thin slices of red onions separated into rings
- Fresh ground pepper

Servings 4
Preparation
Step 1
Drizzle the spinach with half of the olive oil and the lemon juice, toss to coat and divide among 4 salad plates.
Arrange the orange and onions on top dividing evenly.
Drizzle with remaining oil and season with pepper.
