Ingredients
- Sauce:
- 1 lb top sirloin - thinly sliced
- 1/3 cup sugar
- 1/2 cup rice wine vinegar
- 2 Tbsp orange marmalade
- 2 tsp Salt
- 2 Tbsp Soy Sauce
- Flavorings:
- 1.5 Tbsp minced garlic
- 1.5 Tbsp minced ginger
- 2 Tsp orange zest
- 1/4 cup corn starch
- 1 cup vegetable oil

Preparation
Step 1
1) cut sirloin into thin slices, place on baking sheet lined with paper towels and store in fridge for 30 minutes
2) mix sauce ingredients and set aside
3) heat oil in wok/pan over medium high heat
4) dredge beef in cornstarch and then cook in batches in wok until golden brown and desired level of doneness / crispiness
5) remove all but 1 Tbsp oil and add garlic/ginger/zest and cook until fragrant. Add sauce and bring to boil and reduced to syrup, about 5 minutes
6) add beef, stir to coat and serve
