Corn and Beef Bake
This is an easy recipe if you keep hamburger on hand in the freezer like we do. We cook up to 10 pounds at a time with some spices and freeze it in Gladware containers.
** Petite diced tomatoes are wonderful in
this recipe, especially the ones for
Mexican meals, but you can save money
by using the regular diced tomatoes if you're a bulk buyer, and add some spice to taste.

Ingredients
- 1/2- 1 lb ground beef, cooked and drained
- 1 can (14-15 oz.) diced tomatoes
- 1 small can tomato sauce
- 1 can corn, drained
- 1 Tbsp. chili powder
- 1 pkg corn muffin mix
- milk and egg per package directions

Preparation
Step 1
Preheat oven to 400. Mix corn muffin mix per package directions, and let sit.
In an 8x8 casserole dish, mix beef, tomatoes, tomato sauce, corn and chili powder. Pour muffin mix over top of casserole.
Bake 30 minutes or until golden brown in center of casserole.
