Spinach (or Broccoli) Mushroom Quiche

Ingredients

  • 1 9" pie shells (deep dish preferred)
  • 1 1/2 grated swiss cheese
  • 1 red onion minced
  • 1/2 lb mushrooms sauteed in 1 tbsp butter
  • 3 eggs beaten
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dry mustard (Coleman's)
  • dash of cayenne pepper
  • 1 lb cooked spinach or broccoli

Preparation

Step 1

Mix mushrooms and broccoli (spinach), cover bottom of uncooked pie shell. Sprinkle cheese and onion on the top of the mushroom broccoli mixture. Beat the eggs and cream together, add the milk, and seasonings to mixture. Pour over the broccoli mushroom mixture.
Bake at 375 for 45 minutes. cool until set.
may be frozen and re heated without defrosting.
