Cilantro Lime Shrimp

Ingredients
- 1 lb. cooked shrimp
- 2 garlic cloves minced finely
- 2 T finely minced shallots
- 2 T olive oil
- juice of 1 large lemon
- 1/4 cup finely chopped cilantro (use more or less to preference)
- 3 T finely chopped lemongrass
- salt to taste
- ground black pepper to taste
- crushed red pepper flakes to taste

Preparation
Step 1
Combine finely chopped shallots, garlic, cilantro, and lemongrass with cooked shrimp, olive oil, lemon juice, few dashes of salt, a few dashes of pepper and hot pepper flakes (I use a few shakes; you should season to preference) in large bowl. Refrigerate for several hours to allow flavors to blend.
