Mom's Date Filled Cookies

Ingredients

  • 1 cup shortening
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 3 tablespoons milk
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Step 1

DOUGH:
Cream shortening and sugars. Add egg, milk, vanilla and beat well. Sift dry ingredients and add to mixture; mix well.

Chill dough at least 1 hour.

On floured wax paper, roll half the dough. Use a round cookie cutter to cut cookies. Place about 1 tablespoon filling on each cookie and top with another cookie. Press edges to seal.

FILLING:
Combine 2 cups dates, ½ cup sugar, ½ cup water. Bring to boiling, cover, and simmer about 5 minutes, stirring occasionally. Add 2 Tbsp. lemon juice and 1/3 tsp. salt. Cool.

Bake cookies at 375° F for 10-12 minutes.
